German Cottage Cheese Cake

I have found this recipe in Apetite magazine. The cake is very delicious and raisins give the cake nice flavour.


Ingredients:





For the crust:
- 200g spelt flour
- 120g softened butter
- 75g unrefined sugar
- pinch of salt
- 1egg

For the filling:
- 750g cottage cheese
- 100g sour cream
- 150g unrefined sugar
- 2 tbsp lemon zest
- 1tsp vanilla extract
- 3 yolks
- 5 tbsp rum
- 100g raisins
- 1tbsp cornflour
- 3 whites
- pinch of salt

In a large bowl, combine flour, butter, sugar, salt and an egg. Wrap in plastic foil and place in the refrigerator for some time.


Preheat the oven to 175C/350F.

Grease a spring form with butter.

Roll out the dough, then press it into the bottom and the sides of the form. Weight the crust with the beans and bake for 10 minutes.

In a mixing bowl combine cottage cheese, sour cream, sugar, lemon zest, vanilla extract. Eventually add the yolks and rum and stir.

In a small bowl mix the raisins with cornmeal and add to the filling.

Beat the egg whites to stiff peaks and carefully fold the egg foam into the filling.


Pour the mixture into the spring form. Bake in the preheated oven for 55 minutes. The top should be lightly browned and the filling should be set.


Let cool well before serving.
