Falafel with Pita Bread

I have been thinking about this kind of food for a long time and now when the spring is here, it is the right time to try it.
In spite of the fact that Falafel is fried I find this meal as a healthy one, it's made of chickpeas and served with light dip and vegetables, in addition it's really delicious meal. However, my daughter told me that the taste of meatballs was weird. And when I confessed to preparing  vegetarian food she finally admitted that the balls are quite good.

Falafel recipe

- 7oz dried chickpeas
- half of an red onion
- 4-5 cloves of garlic
- 1tsp cumin
- 1/2 tsp ground coriander
- a handful of parsley
- salt
- oil
- chickpea flour (optional)

Soak the chickpeas for 24 hours.
Drain the chickpeas, then put them into a blender, add an onion, cloves of garlic, cumin, coriander, salt, parsley and mix it until it is all combined.

If the mixture isn't too solid, add some more chickpea flour into it and stir it well. Put the mixture into the fridge for about an hour.

Take the mixture out of the fridge. Form the mixture into small round balls. If the mixture is too sticky, you can add some more flour.

Fry the balls until they are brown, and place them on the plate with paper napkins. The paper napkins soak oil up.

Pita Bread

- 2,5 cup of all purpose flour
- 1,5 tsp yeast
- 1tsp sugar
- 3/4 or 1tsp salt
- 1 cup lukewarm water

Put all the ingredients into the mixing bowl, stir until the dough isn't sticky. You can also add some more flour if the dough is too sticky. If the dough is elastic and smooth, place it aside, cover with the plastic sheet and let the dough double in size for about an hour.

Once doubled, cut the dough into four pieces. Roll every piece of dough out. Each should be 1/4inch thick.

Put Pitas carefully on the baking sheet and let them there until the oven is preheat to 400-425F. It takes about 10 minutes.

Bake each circle about 4-5 minutes at the very bottom of the oven, after that turn the circles over and bake another 2 minutes.

Once removed from the oven, take the plate and gently push down. Be careful not to burn yourself.

Serve Falafel with Pita bread, dip and vegetables.
